Carneasada Fries

Ingredients:

  • 4 medium russet potatoes, peeled and cut into fries

  • 1 lb flank steak or skirt steak (season as you wish)

  • Shredded cheese (cheddar or Monterey Jack)

  • ½ cup avocado

  • ½ cup plain Greek yogurt

  • ½ cup pico de gallo

  • Fresh chopped cilantro

    1. Prepare the Fries:

    1. Preheat your air fryer to 380°F (190°C).

    2. Toss the potato fries with olive oil, paprika, garlic powder, salt, and black pepper.

    3. Place fries in the air fryer basket in a single layer. (You may need to do this in batches.)

    4. Cook for 15-20 minutes, shaking the basket halfway through, until golden and crispy.

    2. Cook the Carne Asada:

    1. In a bowl, mix olive oil, lime juice, orange juice, minced garlic, cumin, chili powder, salt, pepper, and cilantro to create a marinade.

    2. Add the steak, ensuring it’s fully coated, and let it marinate for at least 30 minutes (or overnight for best flavor).

    3. Heat a grill or grill pan over high heat and cook the steak for 3-5 minutes per side, depending on your desired doneness.

    4. Remove the steak from heat, let it rest for 5 minutes, and then chop into small pieces.

    3. Assemble the Carne Asada Fries:

    1. Spread the crispy fries on a large plate or tray.

    2. Sprinkle shredded cheese on top of the hot fries to melt.

    3. Add the chopped carne asada, followed by dollops of guacamole and sour cream.

    4. Spoon pico de gallo over the top and garnish with fresh cilantro.
